Basha began in two kitchens (one in Kerala, one in Belgium) and a long correspondence about what a curry should taste like. Shalet grew up in Kerala, surrounded by the smell of curry leaves hitting hot oil. Babitha was adopted from Kerala, raised in Belgium, and spent years trying to find the flavour she half-remembered.

The first jar was for the two of them. The second was for friends. The thirtieth sold out in ten days, and by then we'd realised the recipe wasn't ours alone; it belonged to the cooks we'd learned it from, and to anyone who'd cook it next. Today we deliver our handmade curry pastes across Belgium: Ghent, Antwerp, Brussels, Bruges, Leuven and beyond.

The name Bhasha means language in Malayalam. Taste, we think, is exactly that: a language anyone can learn, in twenty minutes, from a single jar.

The method

Three steps.
Twenty minutes.

No grinding, no marinating, no list of nine spices to source. The paste has done all of that already; what remains is the cooking, which is the part you came for.

  1. Bloom the paste

Heat two tablespoons of coconut oil in a heavy pan. Stir in three tablespoons of basha paste and fry for two to three minutes, until the oil colours and the kitchen smells like Kerala.

  2. Add your favourite protein

Chicken, fish, paneer, tofu, beans, mixed vegetables: 1 kg of protein fills one full package. Cook four to five minutes with a bit of coconut milk as a liquid base, then add the remaining 150 to 200 ml of coconut milk or water.

  3. Serve

Taste. Adjust with salt or a squeeze of lemon. Serve with rice, naan, paratha or flatbread.
